SAU researchers develop biscuit, chanachur from fish

A research team of Sher-e-Bangla Agricultural University (SAU) in Dhaka has developed biscuits and chanachur from fish. Masud Rana, a lecturer at the Fishing and Post-Harvest Technology Department, has been leading the research activities. The research team has already held a press conference with the SAU journalists, and fully described the research. Dr Ahsan Habib, Dean of Fisheries, Aquaculture and Marine Science Faculty was present at the press conference.

 “We use Pangas fish and Silver Carp as main components for making biscuit and chanachur. The biscuit and chanachur made from Pangas fish is named SAU Fish Biscuit-1 & SAU Fish Chanacur-1, and the same product made from of Silver Carp is named SAU Fish Biscuit-2 & SAU Fish Chanacur-2,” said Masud Rana.

“Pangas Fish and Silver Carp are cheap in price in the perspective of our country, but the production rate of both is high. According to market statistics, the demand of both fish is decreasing respectively. For this, fish farmers don’t show much interest to cultivate them. To overcome this situation, and increase the interest of fish farmers for production of Pangas and Silver Carp, attempted to add extra value to these two fish types,” added Dr Ahsan Habib.

From the research, the developed fish biscuit and chanachur contain 40-50% protein, 20-30% fat, 20-25% carbohydrates, 10-15% mineral and 10-12% fibre. So, both the products will be beneficial and fulfill the nutrient demand of health, especially for children and pregnant women.

Research team said, “Pangas fish and Silver Carp have lower spine and easy to work with in research. The proteins of fish are easily more digestible than other species. The price of fish biscuit and chanachur will be acceptable for everyone.” The commercial production of the newly developed products are under serious consideration and hopefully it would be widely popular soon.
